Today (February 21) is Pancake Day!
I’m going to give you 3 guesses as to what I had for breakfast this morning… PANCAKES!!!
When I was a kid I really looked forward to pancake day and I would stuff my face until I couldn’t eat another bite. And even now I still look forward to pancake day. But as my knowledge of nutrition has changed over the years, so have my pancakes…
I no longer eat traditional high carb fattening pancakes, instead I stuff my face with “LOW Carb / HIGH Protein Muscle Building Pancakes!”
My good friend Dave Ruel (the author of Anabolic Cooking) turned me on to this awesome recipe a few years ago and I’ve been eating them ever since. In fact, since Dave shared this recipe with me I haven’t bought regular store bought pancake mix since.
They are pretty simple to make, just take a look at the video clip below to see exactly how it’s done…

Here’s what you’ll need to make this recipe:
–> 1 cup of liquid egg whites (approx. 8 egg whites)
–> 2 whole eggs
–> 2 scoops of whey protein powder
That’s all the ingredients I included in the video, and they work well. However, there are a few “Little Extra’s” that I’ve since added to this High Protein Pancake Recipe to make them even tastier and healthier!
–> Add 1 teaspoonful of sugar free metamucil fiber supplement. This makes the pancakes thick and fluffy and gives them a bit more flavor.
–> Add 1/2 teaspoonful of baking powder to help the pancakes more fluffy.
–> Add 1 teaspoonful of chia seeds. This gives a nice taste and they are super healthy and a good source of omega 3’s.
You can also mix this up in the blender instead of a shaker cup if you like.

Excellent! I can’t wait to try them, I thought I couldn’t eat pancakes anymore cause I wanted to stay low carb so this is excellent! Who doesn’t like pancakes?? Thanks Lee. One question, what is that sugar free maple syrup sweetened with?

The sugar free syrup has artificial sweeteners. You’ll have to read the label of the specific brand you are using to find out which ones.

Maple syrup is supposed to be the boiled-down sap of the sugar maple tree (Acer saccharum?) So there is no such thing as sugar-free maple syrup, unless it’s imitation maple syrup.

It’s no good making fancy decisions on specific ingredients. Eat as much as you can but stop once you’re not hungry. We have to take note of meditation if we’re going to be able to control our bodies.

Man i wish i had got this one in time i used another protein recipe that i used but was lot more carbs than this and made me feel bad……..i did eat around 10 though ๐

great recipe! I had classified myself as 1 hungry body builder but the problem was i was still hungry after eating em all! is it ok to double up next time around or just don’t over do it?btw is whip cream ok with some fresh bananas and strawberrys? i know the fruit is ok but what do you think of spraying a bit of the good ol whip cream on top?thanks

Lee, I found a pretty awesome tasting no carb, no sugar or gluten pancake syrup from Walden’s farm. I can’t find it in any store but you can order online. ๐

Exactly, it’s an artificial syrup that’s sugar free, but tastes very similar to maple syrup.

It will vary depending on the exact brand of protein powder you are using. But all you have to do is measure the ingredients and do the math.
In this one…
2 scoops of whey has about 50 grams of protein
1 cup of egg whites has about 25 grams of protein
2 whole eggs has about 12 grams of protein
So if you ate all of this as I shown here it would be a very generous 87 grams of protein!

It’s up to you what you add to them. Feel free to make your own variations of this recipe. But just remember that adding fruit, berries, cream, etc. cancels out the whole “Low Carb” aspect.

This (and the protein cupcakes) are excellent. I was reading your “High Protein Late Night Snack” entry when I linked to this. So I ‘combined’ to make a variation on a theme:
6 TBSP – Egg White Substitute
1/2 Cup – Egg Substitute
1 Scoop – Optimum Nutrition Gold Standard Blueberry Casein Protein
Blend Egg Whites and Egg Substitute in blender first (helps make fluffier), then blend in the protein. Cook on a hot skillet.
228 Calories
46g Protein
5.7g Carbs
1.2g Fat
10mg Cholesterol
The blueberry taste is strong enough that you don’t need butter. They are a little ‘flat’ since there isn’t an egg in there, but still tasty. Also, it’s not as many as your recipe, but it’s a great before bed snack.
