High Protein Cup Cake Recipe!

Everyone loves chocolate cup cakes and brownies (me included). But we don’t want to consume all those fattening empty calories that go right to the waistline.

So in this blog post I’m going to show you how to get the best of both worlds…

that not only taste good, but they are healthy and high in protein!

This is what you’ll need to do…
– Get a large microwave safe coffee mug
– Grease the inside of the mug with PAM spray.
– Crack 1 egg into the mug.
– Add in 1-2 scoops of chocolate protein powder.
– Add in 2 tablespoonfuls of natural peanut butter.
– Pour in a small amount of coffee to cover the top of the ingredients.
– 1 packet of stevia sweetener (optional)

Stir up the mixture with spoon until it’s all consistently mixed and looks like a chocolate batter in the mug. Microwave the mug of mixture for 1 minute.

Note: cooking times may vary depending on how powerful your microwave is, but be conservative. If you over cook the cup cake it will become rubbery and chewy. It’s actually ok to have it a little bit under cooked so that it remains moist and soft.

Here are the nutritional facts for this cup cake recipe:
490 calories
60 grams of protein
8 grams of carbohydrates
22 grams of fat (mostly from healthy fat in natural peanut butter)

You can adjust the numbers according to how much you eat. For example, if you were to split this between 2 people, then just divide the numbers above by 2 to get the amounts per serving.

    You can use any nut butter (i.e. almond butter, cashew butter, etc.)

    I’ve never tried making real cup cakes in the microwave before, but it may work. But it will depend on the recipe and cake mix you are using. You’ll have to research of be willing to go through some trial and error experiments to figure this one out yourself.

    The only problem with this recipe is that I can’t stop making it!

    It’s so quick, easy and tasty. Since I read the article / watched the video about 5 hours ago, I’ve made this cup cake 4 times. I used strawberry protein powder and it tastes great. I found that no sugar or sweetener is necessary.

    I’ve got an old 600 Watt microwave so it takes nearer 3 minutes to make (including heating the peanut butter first for 1 minute to melt it because it’s quite thick).

    Also, this recipe fits in well with your “Low Carb” not “NO Carb” principle in your “Low Carbs = Low Energy?” article.

    I love your articles and videos – I get so much out of them. Thanks for taking the time.

    Sure, you do not need coffee. That’s just added in for extra flavor. A lot of people enjoy the taste of coffee and chocolate together.

    I have never made them in a conventional oven before so I don’t know the time or temperature needed. But a lot of muffin recipes say to heat the oven to about 350 and bake for 20 minutes. You could try that with these as well.
