Here’s What You Gotta Do…

Cut the zucchini length wise into strips.

Pre-heat your frying pan over medium heat. Add in some olive oil to prevent the zucchini from sticking to the pan.

Lay the zucchini strips in the pan, spice them up with garlic and herb seasoning (or whatever spices you like).

Cut Zucchini Strips

Cook on both sides until they start to caramelize and are lightly browned.

That’s it, quick, simple, and tasty.

Give this one a try and then leave me a comment below and let me know how you like it.

Thanks for the tip. I’ll have to shop around and get some coconut oil, I haven’t tried it cooking with it myself.

  • Great choice Lee. Veggies are very important to a total nutrition regimen. Thanks for sharing.

    Lee-
Thanks for the clarification of protein carb ratios between cutting and bulking.

I have to admit you are coming along in the kitchen. I hardly wince at all any more. 🙂

Next time, Cut the stems off the zucs. Season one side of the zuc’s on the board. Then put them in the pan seasoned side down. Then season the top side of the zucs in the pan. Also, starting with a LIGHT dusting of flour on the zucs will provde a nice crust. More like a french fry.

Zucs are great to grow in a garden. Gardeners say, “One plant is gardening, 2 plants is socialism;” -( because you will have so many to give away.) Also, Zucs grow up to an inch a day.

The size zucs you used are also good in a salad raw.

Coconut oil is a great shortening/oil. Blessedly, it is still slightly less expensive per ounce than gold.

Olive oil is not just Olive Oil. The good stuff sez “First cold Pressing” on the label.”
The rest of the Olive oil is steamed out under pressure.

    Any questions?

    Jim

  • hazhmir dean

ok, this is easy to prepare.
i would like to have this as my dinner tonight.

i think it wont make much different, isnt it?

Hey Lee i wanna ask you a question. I work in the oil field so i work long long hours and although i do get the time to eat, i really don’t get to eat too healthy since most of the healthy recipes i know are hot foods and well where i work there is no way to heat up our food. Is there any way u could come up with some recipes for me and others who might be in the same situation? A few recipes would really help cause the same food over and over get old real quick. Fruits, drinks, anything u can come up with id really appreciAte it! Thanks for your time

Jim, do you have your own cooking website / youtube channel?
    If not you should 😉

    I totally agree with that…
The benefits from a vegetarian diet do not come from the lack of meat, but from the abundance of vegetables.

That’s fine, the oil you use won’t make or break the meal, but in the future you should look for healthier oils such as olive oil and coconut oil as Ghai mentioned in his comment above. There’s not much nutritional value in corn oil.

I’m doing the live talk shows now as part of the Total Fitness Bodybuilding “Inner Circle” Coaching Club. This way I can focus the discussion in more detail on smaller group of people. It also cuts out all the negative trash talk that we used to get from the people who would troll the open talk shows.

The whole idea behind the “Inner Circle” is to provide a positive and encouraging environment for people to achieve their bodybuilding and fitness goals. We don’t need smart asses in ruining the show and talking vulgar to the members. The price of the membership is $19.95 per month and there’s no contracts or commitments. Your membership is simply on a month to month basis. All the details are outlined on my website at: http://www.TotalFitnessBodybuilding.com

As for my education, I went to college to study computers (that’s how I went about starting my own website). However, bodybuilding and fitness is my passion. I’ve been working out since 1990 and competing since 1995 and coaching people personally since 1999. But to answer your question, no I do not have a degree in nutrition. I learned what I know through personal study and from getting coached by and working with bodybuilders and fitness competitors for the past 20+ years.

  • stratt,

Sure, get creative and try different ways to prepare your meals. I’ve cut them up like french fries and have baked them in the oven before. They taste really good like that.

I’ve got another recipe idea that you may like as well at:

  • This is a great recipe that is quick and easy to make. Zucchini has never been one of my favorite veggies, but after making them this way, I can honestly say that they will become a great addition to a healthy meal. I have never used coconut oil. but I have heard that is good to use.
