{"id":3649,"date":"2011-04-05T21:20:50","date_gmt":"2011-04-06T01:20:50","guid":{"rendered":"http:\/\/leehayward.com\/blog\/?p=3649"},"modified":"2013-05-01T16:41:45","modified_gmt":"2013-05-01T20:41:45","slug":"high-protein-muffin-recipe","status":"publish","type":"post","link":"https:\/\/leehayward.com\/blog\/high-protein-muffin-recipe\/","title":{"rendered":"High Protein Blueberry Bran Muffin Recipe"},"content":{"rendered":"<p>I just made an awesome high protein snack today and I wanted to share the recipe with you here&#8230;<\/p>\n<p>It&#8217;s <a href=\"http:\/\/www.metaboliccookingprogram.com\" target=\"_blank\">&#8220;High Protein Blueberry Bran Muffins&#8221;<\/a> and I got this killer recipe out of the brand new <strong>Metabolic Cooking Cookbook<\/strong> that my friend Dave Ruel has just released over at his website&#8230;<\/p>\n<p><a href=\"http:\/\/www.MetabolicCookingProgram.com\" target=\"_blank\">www.MetabolicCookingProgram.com<\/a><\/p>\n<p>The thing that I like the most about this recipe is that it&#8217;s a quick and nutritious high protein snack that you can take with you anywhere. Just put a couple of these tasty protein packed muffins in a zip lock bag and you&#8217;re good to go!<\/p>\n<p>I&#8217;ve posted a screen cap of the recipe below, it is taken right out of the <strong>Breakfast Guide Cookbook<\/strong> <em>(on page 8 to be exact).<\/em> <\/p>\n<p><a href=\"http:\/\/www.metaboliccookingprogram.com\" target=\"_blank\"><img decoding=\"async\" src=\"http:\/\/img827.imageshack.us\/img827\/7093\/screenshot20110405at958.jpg\" alt=\"High Protein Blueberry Bran Muffine Recipe\" \/><\/a><\/p>\n<p><U>Basically all you need for this is:<\/u><br \/>\n&#8211; 1 cup oat bran<br \/>\n&#8211; 1\/2 cup flax meal<br \/>\n&#8211; 4 scoops protein powder<br \/>\n&#8211; 2\/3 cup frozen blueberries<br \/>\n&#8211; 1 teaspoon stevia<br \/>\n&#8211; 1 teaspoon cinnamon<br \/>\n&#8211; 1\/4 teaspoon salt<br \/>\n&#8211; 1 teaspoon baking powder<br \/>\n&#8211; 3 egg whites<br \/>\n&#8211; 1 teaspoon maple extract<br \/>\n&#8211; 2\/3 cup water<\/p>\n<p>Now I made a couple minor adjustments to this recipe. In place of 3 egg whites, I used 2 whole eggs. Yes, using whole eggs will bump up the fat and calorie content a bit, but I find the egg yolks make baked goods <em>(like muffins)<\/em> more moist and tasty. <\/p>\n<p>Also, in place of maple extract I used a couple tablespoonfuls of sugar free maple syrup instead<br \/>\n<em>(simply because I never had any maple extract on hand)<\/em>. <\/p>\n<p>The actual cooking is pretty simple, just mix all the ingredients together in a big mixing bowl, spoon the mixture into a muffin pan sprayed with PAM cooking spray, and then bake at 350 degrees for 25 minutes.<\/p>\n<p>That&#8217;s it, pretty straight forward&#8230; Even a &#8220;Muscle Head&#8221; like myself can make it&#8230; \ud83d\ude09<\/p>\n<p>Give this High Protein Blueberry Muffin Recipe a try and then leave me a comment below letting me know how you like it.
